Instructions

1. Mix dry ingredients
In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
2. Cream butter and sugar
In a large mixing bowl, cream the butter and sugar together until light and fluffy (about 2-3 minutes).
3. Add wet flavors
Add the egg, vanilla extract, and almond extract (if using), mixing until well combined.
4. Combine wet and dry
Gradually add the dry ingredients to the wet, mixing just until combined. Do not overmix.
5. Divide dough

Slice the chilled dough into 1/4-inch (0.6 cm) thick rounds. Place on prepared baking sheets, spacing about 2 inches apart.
12. Add sprinkles
Top with pastel sprinkles if desired.
13. Bake
Bake for 10-12 minutes, or until edges are just beginning to turn golden. Do not overbake.
14. Cool cookies
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
