# Expert Tips:

01 -
  • They're ready in under 35 minutes start to finish, perfect for last-minute gatherings or when you want something fancy without the fuss.
  • The contrast of creamy, warm Brie against crispy pastry and spicy-sweet toppings keeps people reaching for one more bite.
  • Puff pastry does most of the heavy lifting, so even if you're not confident in the kitchen, these turn out reliably beautiful.
02 -
  • Don't skip the parchment paper—pastry that touches a bare baking sheet can stick, and you'll lose that beautiful crispy bottom.
  • Keep your pastry cold while you work; if it starts to get soft, pop the whole baking sheet in the freezer for 5 minutes before baking. Warm dough won't puff properly.
03 -
  • Make the whole batch ahead and freeze them unbaked on a tray; bake directly from frozen, just add 2 minutes to the baking time.
  • If you're nervous about folding, just place the Brie and toppings in the center and pinch the four corners to the middle—it creates a little pouch that looks intentional and holds everything in.
